Filipino favorite Beef Bulalo

For the record, I haven’t met anyone who doesn’t like Beef Bulalo or Filipino Beef Marrow Soup. That being said, I assume that everyone loves bulalo. Native to the Southern Luzon region of the country, Bulalo is a comforting light colored soup with rich beef broth made from hours of simmering beef shanks and bone marrow bones. The procedure is painstaking as the collagen and fat has to be melted into the clear broth. Seasonings vary from chef to chef but staple ingredients are usually composed of salt, black pepper and fish sauce, garlic etc. Although just like adobo, there have been many versions of bulalo across the country but at its core, bulalo is a simple cattleman’s stew, best cooked in a large cauldron with whatever vegetables available. Some use potatoes, corn, pechay, cabbage, string beans, onion leeks, among many others. 

Bulalo is one of my favorite Filipino dishes! My family and I wouldn’t really mind driving all the way up to Tagaytay City if we’re really craving for this particular dish. It’s a treat to eat especially during monsoon season, cold rainy days or during pre-holiday season. I personally like eating Bulalo because it’s a filling stew that’s deceptively light. The soup alone with rice and dipping sauce is good enough for a meal. 

However, if you’re too lazy to cook, doesn’t have much patience to wait for it to cook or to even drive to Tagaytay where several restaurants are specializing in this dish.
